Varies. Sometimes the item will be worth more and other times the items for the trade will be worth more.
It's all about checking what gives you more profit and go with that.

Any common hot commodities you could speak about? I'm no AH expert and I worry I'll list stuff and go to bed and then wake up to having been horribly undercut and wasting my time or something because I was an idiot

From experience anything that's new and hot in swipp usually tends to have a higher items required price vs the actual item and then gradually swaps.
I can only say I tend to have the best sales by selling in stacks of 5, 10 and the number required for a trade when I sell the materials.

Otherwise selling the HibDen required items and some genes (Branches, Blossom) can be more profitable than selling the items required for them.
Harder to get familiars like the Cobras and Driftwood Baron can also be better to sell as is instead of items.

Just try a few things out and see what works tbh.
