DA i'm not a big minmaxer when it comes to exalting, at least not in the way a lot of people seem to be. so for me, "most profitable" is whatever gets me the most money in the shortest amount of time. i'm 100% down to do say, 50 7's rather than 50 5's, because i can get way more out of them from a pb or raffle or exalting myself than i can from the 5's. 7's just pay more, even if they take more time and aren't optimal. my big exalter (levels wise, if we're talking pre levels) days are behind me but i once pre leveled 3000-ish levels for a push. another time...i don't remember the levels but i had 300 dragons done and at least another hundred more dormed someplace. i'm definitely not one of the ones that does 4000 levels or more every push though. not unless i get really lucky attending. but that's by choice.

Buddy, that's a big hole in your own logic, 7s do not pay more exactly because they take more time...
in the time it takes you to level a dragon from 6 to 7, you can level an entirely new dragon from 1 to 6, and same for 5->6 and 1->5 etc etc. while a single level 7 nets a higher price, you could train 2-6x as many lower level dragons in the same time frame and make comparable if not higher profits, and/or be more helpful for dom placements.
obviously its your fodder and your time so you can do whatever you want. i can understand exclusively training to 7+ if the fodder floor is very high, if you have limited space/starting funds, or if youre storing for a battle that's weeks away. but for all other situations it is undeniably more efficient in both time and price to not train to 7
